Indian Khajur Dry Fruit Barfi – Dates Dessert

So last week we made the sugar free gluten free anjeer barfi or fig barfi for dad that’s really yummy to taste. But this week we figured we’d show you how we do it when we want just dry fruit energy bars. No dairy, no gluten, no sugar!

No added sugar is good for diabetics like my dad, and gluten free is good for celiacs like a friend of mine, and good for well anyone who wants to eat sweets without getting fat.

The khajur pak benefits are that they give you natural sugars and increase your energy levels without piling on the calories. And they’re awesome enough to eat a couple of dry burfi a day! How cool is that?

Now before you go thinking that a dry fruit barfi recipe is just an energy bar recipe, let me tell you the well, yes it is, but it is one of those Indian sweets that have been around for aeons before an energy bar.

Did I just waffle? Yep, probably the effect of eating another piece of heavenly khajur dry fruit barfi or khajur pak bites. This is one of those guilt-free date desserts that you shouldn’t miss! It’s also a pretty good dessert to make for Father’s Day, or well any other day of the year!

So let’s get to it. How do you make a sugar free khajur barfi? How do you make a gluten free dry fruit barfi? Or even a sugar free date burfi?

How to make dairyfree glutenfree sugarfree khajur dry fruit barfi

Prep for Date Barfi

Just like we do for the anjeer barfi, soak about 200 grams of anjeer or figs in 100 ml water overnight. If you’re preparing it the same day, soak the anjeer or figs for 4 to 6 hours instead.

Next, grind figs or anjeer along with 300 grams of dates to a rough paste and set aside.

Start with making slivers of almonds and spreading them in a tray that’s been greased with coconut oil and lined with butter paper.

Cooking the Date Barfi or Kahjur Ki Barfi

Next roughly chop the remainder of the dry fruits, namely about 250 grams of almonds, pistachios and cashew nuts and roast them for a few minutes till you get that beautiful nutty aroma.

Cook the khajur (date) and anjeer (fig) paste with 70 ml ghee and keep stirring till it gets really dry. The traditional method uses ghee, but we use coconut oil which is dairy free and enhances the nutty flavor.

Once it looks quite dry, add in the roughly chopped nuts and stir till it leaves the sides.

Setting the Date Barfi aka Khajur Barfi

Pour the mixture into your pre-greased tray, cover it with one more layer of tissue and flatten it with your hand, spatula or a towel. The mixture is very hot, so if you’re doing it by hand, first grease your fingers and palms or you’ll get burnt like me!

Although we use a flat tray to make this khajur sweet recipe, you can make a khajur roll using the exact same recipe. The only additional step in the khajur roll recipe would be rolling the mixture in a bed of grated almonds or coconut powder or sesame (til) before refrigeration.

Refrigeration Time!

Refrigerate the mixture for about an hour or two till it gets solid. Once it’s solid, peel off the tissue paper, cut the dairy free sugar free dry fruit barfi into pieces and serve!

Ingredients
  

  • 300 gms Dates (Khajur)
  • 200 gms Figs (Anjeer)
  • 250 gms Nuts Almonds, pistachios, cashews and walnuts (Roughly chopped)
  • 30 gms Almonds Slivers
  • 70 milliliter Coconut Oil
  • 100 milliliter Water

Instructions
 

Preparation for the Khajur Dry Fruit Barfi

  • Soak the figs in 100 ml water for 4 to 6 hours or overnight.
  • Make slivers of 5 to 10 almonds and set aside.
  • Roast the roughly chopped nuts and set aside.
  • Line a tray with butter paper and grease with coconut oil. Sprinkle the slivered almonds on it and set aside.

Cooking the Khajur Dry Fruit Barfi

  • Grind the figs or anjeer along with the dates to form a rough paste.
  • Add 70 ml coconut oil to an open pan.
  • Pour the date and fig mixture into this pan and stir till it gets quite dry.
  • Add in the chopped nuts and fry for a few more minutes till it starts to leave the sides.
  • Pour the mixture into the pre-greased tray and cover with another sheet of butter paper.
  • Flatten the mixture with your hand, a spatula or a piece of cloth. (If using your hand, wait for a few minutes and grease your fingers well to avoid burning them.)
  • Once flat, refrigerate for 1 to 2 hours. The longer the better.
  • Once ready, peel of the top layer of tissue paper, turn it over on a chopping board, cut into slices and serve.
