The East Indian version of the famous Olivier salad, this is a cooling compliment to the spicy dishes. Perfect for the hot Indian weather, you can play around with the ingredients to suit your taste.
Russian salad does not require too many ingredients, especially in our local version. Refreshing and cooling, this summer salad is simply perfect! What doesn’t fit in the canapes can be later served as a salad with the main course.
Ingredients You Need to Make Russian Salad – East-Indian Style
Russian salad can be made with a mix of veggies of your choice, and a simple mix of mayo, salt, and pepper. Apples are a plus. You can also add boiled eggs, shredded boiled chicken, or diced ham.

Ingredients
- 2 Apples
- 2 Potatoes
- 2 Carrots
- 100 Grams French Beans
- 100 Grams Green peas
- 12 Tablespoons Mayonnaise
- 50 Canapes
- 1 teaspoon Salt
- 1 teaspoon Pepper Powder
Instructions
- Cut the potatoes and french beans fine (approx 0.5 cm pieces).
- Boil the chopped French beans, potatoes and green peas on a high flame for 5 to 10 minutes. Dice the apples and carrots fine too.
- Add mayonnaise, pepper and salt to a bowl and mix.
- Add the chopped ingredients and mix well.
- Refrigerate for about 2 hours or longer.
- Ladle spoonfuls into canapes just before serving.

Notes
- Do not refrigerate canapes after filling them or they will get soggy.
- Serve the leftover Russian salad as a side for dinner.

Notes for making canapes with Russian Salad
- You can add sugar honey if you want it sweeter.
- Add more or less apples if you like.
- Replace any of the veggies with another of your choice.
- Add diced ham or shredded chicken to make it non-vegetarian. Boiled eggs will also work.
- The Russian salad can be made a day earlier and stored in the refrigerator.
- Don’t spoon into the canapes till just before serving.
- Finish within 30 minutes of serving or it will get soggy.
